Pink Panther Pasta (Exclusive recipe by POLARIS BITES)

Based on what was in season and available at our local market, we decided to make a Roasted Red Beet Pesto Pasta. We were determined to help kids embrace this veggie that is oh so scary! Not only is this dish simple, colorful and fun to make, but it is also super healthy having tons of nutrients: vitamin C, folate, potassium & fiber.



.                 4-6 medium raw red beets cut in half

.                 2 shallots

.                 4 peeled garlic cloves

.                 Salt and Pepper to taste

.                 About a 1/4 cup of olive oil

.                 1/4 cup of toasted pine nuts

.                 1/4 cup Parmesan

.                 Pasta of choice – we like using bow tie pasta for kids!

Preheat oven to 400 degrees. Your OMGkids can help you drizzle the beets, shallots and garlic with olive oil and season with salt and pepper. They can also help you wrap each bunch of veggies in foil. You can then roast them in oven for 45 minutes to 1 hour until soft. Keep an eye on the roasted veggies, because the garlic & shallots can roast more quickly than the beets and you don’t want them to burn. You can also roast the veggies beforehand to run more quickly through this process.

Your OMGkids can then help you add water to a pot to boil so you can begin cooking your pasta. Once the beets are tender and cooled, remove the skins together with your kids. Kids love this part because they get their hands dirty! Or, shall we say they will be caught red handed with this recipe! The best way to peel the beet skin is with the edge of a spoon, lightly scraping the sides of the beet and removing skin.  You can also skip this step and peel the beets before roasting them.

In a food processor you and your OMG kids can add beets, shallots, garlic, pine nuts and about 1/4 teaspoon of salt. Combine ingredients till smooth. Slowly add the Parmesan and some olive oil until well combined. Add a ¼ cup of water to smooth out pesto.

When your pasta is cooked and strained, have your OMG kids slowly mix the beet pesto with the pasta. They will see how the pasta changes color and slowly turns into Pink Panther Pasta. You can store any additional beet pesto mixture in the fridge for about 3 days.
